Cinnamon Honey Butter Baked Sweet Potatoes
One bite of these sweet potatoes and you'll be obsessed! Tender potatoes are coated in honey cinnamon butter, baked to perfection, and finished with an optional oat pecan topping.
- 2 1/2 pounds sweet potatoes peeled and diced into 3/4-inch to 1-inch pieces
- 5 tablespoons butter
- 3 tablespoons honey
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/4 cup pecans
- 1/4 cup old fashioned oats
- 1-2 tablespoons brown sugar
Preheat oven to 350 degrees. Spray a 9x13-inch baking dish lightly with cooking spray.
In a small microwave-safe bowl, melt the butter, then add the honey, cinnamon, and salt. Stir to combine.
Place sweet potatoes in the baking dish, then pour the honey butter mixture on top and toss well to evenly coat.
Transfer baking dish to the oven and bake for 50-55 minutes total, tossing twice while they bake. During the last 5 minutes of baking time, scatter with pecans and oats. Serve and enjoy!
