A vibrant lunch or dinner-worthy salad, packed with dark leafy greens, juicy berries, crunchy almonds, and creamy goat cheese. We especially love the easy homemade strawberry vinaigrette, but any favorite balsamic or house dressing pairs well, too.
3stalks of green onionlight green and white parts only, thinly-sliced
6-8ouncesgrilled chickenshredded or diced
1medium avocadosliced or diced
⅓cuptoasted sliced almondswalnuts, or pecans
¼cupcrumbled goat cheeseor feta
Instructions
To make the dressing, add strawberries, vinegar, olive oil, salt, and pepper to a small food processor or blender. Blend on high speed until smooth. Sample and blitz in honey or agave nectar and more salt and pepper to taste. Stir in poppy seeds, then store in the refrigerator until ready to use.
1 cup strawberries, 2 Tablespoons apple cider vinegar, 2 Tablespoons extra-virgin olive oil, ¼ teaspoon kosher salt, ¼ teaspoon black pepper, honey or agave nectar, 2-3 teaspoons poppy seeds
To assemble the salads, combine spinach, strawberries, cucumber, red onion, and green onions in a large bowl. Add a small drizzle of dressing, then toss gently to combine.
6-8 cups fresh baby spinach, 8-10 strawberries, ½ English cucumber, ¼ of a small red onion, 3 stalks of green onion
Divide among individual bowls or plates, then top with chicken, avocado, nuts, and goat cheese or feta. Add more dressing to taste and enjoy right away.
