I’ve always enjoyed a delicious muffin—who doesn’t!?—and can specifically remember eating far too many of the gigantic, sparkling sugar-topped varieties to fuel data entry in my college work study days.
Sadly, that kind of muffin would probably send me straight into a sugar coma now, but as a Mom, I love to find and create muffins that taste as good and are a little more likely to make you feel good, as well.
Freeze for Later
All of these muffins are excellent to freeze for 2-3 months, then defrost for grab-and-go breakfasts or snacks. This is a wonderful way to stock the freezer ahead of a new baby, surgery, or any busy season.
Bake the muffins as directed and cool all the way to room temperature. Stash in a freezer-safe zip-top bag—regular Ziplocks work great but a large Stasher can be used again and again—and press out excess air. Freeze until needed, then defrost overnight on the counter or quickly in the microwave using 15-second bursts on full power. Muffins on demand!

Ripe banana makes a terrific base for all sorts of baked goods, including muffins. It’s got natural moisture, flavor, and sweetness all in one convenient package.
