Apricot Brie Bites
Apricot Brie Bites are beautiful and so delicious! Crisp mini phyllo cups filled with creamy baked brie and sweet apricot jam are an easy yet elegant appetizer that you can toss together in less than 15 minutes.
I just love phyllo shell appetizers — they are so cute and perfectly portioned, while the delicate, flaky shell so beautifully sets off any number of delicious fillings. My favorite combination, though, is always something creamy on the inside, to complement the crisp phyllo cup. If you’re on the same page, brie is the dreamiest — and easiest! — filling around.

Ingredient & Substitution Notes
Here are a few notes and shopping tips about the ingredients you’ll need. Find full amounts in the print-friendly recipe card below.
- Miniature phyllo shells. These guys are the perfect base for all manner of party appetizers. You’ll typically find them in the freezer section, near puff pastry and full sheets of phyllo dough.
- Brie. Brie is a soft, off-white cheese usually made from cow’s milk. It originated in France, but variations are widely made and distributed across the world today. Brie typically is sold in a disc or wedge together with its bloomy rind, which is technically a white mold and is considered a delicacy. You can also use a product known as “cream of brie” which is a thinner, creamier version of the cheese, that you can simply scoop out in small portions and scrape into the phyllo cups before baking.
- Apricot jam or preserves.
- Fresh thyme. Just a sprig or two, enough to scatter a couple of leaves on top of each baked phyllo cup. Optional but very pretty and complementary to the sweet jam.
How To Make Easy Apricot Brie Bites
This is every bit as simple as it looks! Here’s what to do:
- Arrange phyllo shells on a baking sheet. Using parchment is optional but does make for zero clean-up.
- Fill each cup with a small cube of brie plus a scant teaspoon of jam. You don’t need to be very precise here.
- Bake for 6-8 minutes at 325 degrees F, just until the brie melts and the shell is very lightly brown. Top each with a few thyme leaves, serve, and enjoy!
Make Ahead
To get extra ahead for a party or gathering, you can fill the frozen phyllo shells with brie and jam, store in the refrigerator for 2-3 hours, and bake when ready.
You can also adapt this to ensure you have fresh bites to restock throughout an event. Prep all of the bites when you like, then bake in batches to refill your serving platter as needed.

Ingredients
- 15 mini phyllo shells such as Athens brand
- 3 ounces brie skin removed and cut into 1/2” cubes, see note
- 1/3 cup apricot jam
- 2-3 sprigs fresh thyme for garnish
Instructions
- Preheat oven to 325°F.
- Arrange phyllo shells on a baking sheet, and place a small cube of brie inside each one. Add a small dab of jam, just a scant teaspoon, to each phyllo cup.15 mini phyllo shells, 3 ounces brie, 1/3 cup apricot jam

Notes
- Make Ahead: Fill shells with brie and jam. Store in the refrigerator for 2-3 hours. Bake when ready.
- What kind of brie? You can easily make this with standard brie, just don’t include the rind inside of the phyllo cup filling. Freezing the brie for a few minutes makes it easier to cut off the rind and cut the remaining cheese into small pieces, but you really don’t need to worry about making clean cuts for these appetizers, anyway, since the brie will melt inside of the phyllo cups. You can also use a product known as “cream of brie” which is a thinner, creamier version of the cheese, that you can simply scoop out in small portions and scrape into the phyllo cups before baking.
- Variations: Add finely chopped walnuts or pecans. Swap apricot for another type of jam. Add a drizzle of honey for even more sweetness.
