A Note from Monica
Why you’ll love this family favorite recipe!

Among the thousands of chicken skillet recipes out there, this creamy garlic number truly stands out. The rich cream sauce, woodsy thyme, and plentiful garlic guarantee that. Rest easy: this is not a raw, pungent, in-your-face garlic effect, because honestly, almost no one loves that. Instead, you’ll find a soft, mellow garlic flavor woven into the sauce and mingled with onions, herbs, and a bit of lemon to brighten and lift.
This recipe is a spin on my husband’s all-time favorite lemon thyme chicken. With the more decadent cream sauce and pretty whole garlic cloves speckled throughout, I find this version even more elevated. May this skillet serve your family as long and as well as it has mine!
“I made this for my family dinner. My 2 young boys absolutely loved it! They said it was an AWARD WINNING recipe! Drizzled the sauce on rice or pasta and it’s amazing! Try it!”
Ingredient Notes
- Chicken breasts. You want boneless, skinless, and thinly-sliced, so they will cook through quickly and evenly. Purchase cutlets or slice them yourself.
- Yellow onion. Use about half a medium onion; stash the rest in the fridge, or chop and freeze to use another day.
- Garlic. I’m all about the jarred minced time-saver on many nights, but for this recipe, you’ll need whole cloves—about a dozen of them, so just buy a whole head of garlic. Pre-peeled cloves do work as a partial shortcut.
- Fresh lemon, thyme, and parsley. I’ve cooked a lot of chicken breasts in my day, and truly believe herbs and citrus do the most heavy lifting to transform the humble weeknight workhorse into a dish worth coveting.
- Cream. Heavy or light cream gives you the richest, most stable sauce. Substitute half and half in a pinch, but take greater care not to overcook the sauce, even if it is a little thin, because it will be more prone to separating.
- Staples and seasonings: low-sodium chicken broth, kosher salt, black pepper, garlic powder, butter, and olive oil.
You may be concerned about using so much garlic in a single dish, but trust the process. Cooking whole cloves like this imparts a very different flavor than you’d get from frying this much minced garlic. It will be mellow and rich and delicious.
How To Make Creamy Garlic Chicken
While everyone can love eating this dish, the cook will love that it’s made in one skillet and takes about 30 minutes. That’s start to finish with no complicated prep.
- Lightly season and sauté the chicken; transfer to a plate.
- Build the sauce one element at a time, beginning with the onion sizzling in a pat of butter. We want to give the onion as much time to soften and mellow as possible. Add the garlic—some cloves smashed, some whole—after a couple minutes, followed by broth, lemon, and thyme.
- Stir in cream after the sauce has reduced a bit. Return chicken to the pan and simmer for another 2-3 minutes.
- Keep over low heat until ready to serve! A few sprigs of thyme, chopped fresh parsley, or lemon wedges make pretty garnishes, if you like.
Preparing the sauce in the same skillet as the chicken is a must. It not only simplifies clean-up, it also ensures the sauce has maximal flavor by incorporating all the delicious browned bits left from cooking the chicken, known as the fond.
Tips and Variations:
Although this skillet has simple steps, over the years I’ve learned the following small details do make a difference to getting the absolute best finished result.
- Room Temp Chicken: Try to let your chicken sit at room temperature for 10-15 minutes before it hits the pan. This helps it cook more evenly.
- Pounded Chicken: If your chicken is uneven after slicing, you can take the extra step of pounding it into thinner cutlets, which also contributes to even cooking and tenderizes each piece a bit more.
- No Guesswork: Use an instant-read thermometer to know exactly when your chicken is cooked through to 165°F. It’s such a tiny investment for a lifetime of perfectly-cooked, tender chicken.
- Adjust Cooking Temp: Pay attention when the directions indicate to reduce the heat from medium-high, to medium, to medium-low. This is important because it ensures the sauce thickens but doesn’t seize up, particularly when incorporating cream at the end. Take extra care to reduce the temperature if cooking in cast iron, which retains heat exceptionally well.
- Add a Splash of White Wine: If you have an open bottle, pour a splash of white wine into the sauce at the same time as the chicken broth, lemon juice, and thyme. It will add even more depth of flavor.
What To Serve with Creamy Garlic Chicken
Freshly-baked bread or breadsticks are always popular to mop up the extra garlicky pan sauce. Readers also love to drizzle the sauce over mashed potatoes, rice, egg noodles, or other pasta.
The best veggie sides are not too heavy but can stand up to the big flavors here. Roasted carrots work well, especially with a little complementary thyme of their own, as do green beans or roasted broccolini.
Any salad can work but I’d prefer to lean into sturdy greens like kale, radicchio, or cabbage, and dress them somewhat lightly.

- 2 teaspoons lemon juice
- 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried
- 1/2 cup heavy cream
- fresh thyme, parsley, and lemon wedges, optional garnish
Instructions
- Slice each chicken breast in half lengthwise so you have 4 thinner cutlets. Sprinkle both sides of each piece lightly with salt, pepper, and garlic powder.2 large boneless, skinless chicken breasts, kosher salt and black pepper, 1-2 teaspoons garlic powder
- Warm the olive oil and 1 Tablespoon of the butter in a large skillet over medium-high heat. Once the butter melts, add chicken and cook for 3-4 minutes on each side, until it forms a nice golden crust and is cooked through. It should be noticeably reduced.1/2 cup low-sodium chicken broth, 2 teaspoons lemon juice, 1 teaspoon fresh thyme leaves
- Reduce heat again to medium-low, then stir in the cream. Return chicken to the skillet and let everything simmer gently for 2-3 minutes to blend the flavors.1/2 cup heavy cream
- Garnish with fresh thyme and parsley, lemon wedges, and a little more black pepper, as desired. Serve and enjoy!fresh thyme, parsley, and lemon wedges
Notes
- Chicken Cutlets: You can also buy thin-sliced breasts to save the trouble of slicing them yourself. Just watch the cooking time closely, because if they’re very thin, they’ll cook extremely fast and may become dry.
- Prep Note: If possible, take your chicken breasts out of the refrigerator and let them rest at room temperature for 10-15 minutes before you start cooking. This small step makes a surprising difference to help them cook more evenly, so the inside is done just as the outside gets nice and browned. If they’re not very even, you can also pound them to even thickness, which helps them stay tender, too.
- Storage: Leftovers keep well in the fridge for 3-4 days. I always recommend microwaving chicken at 50% power, if that’s how you reheat it, to avoid drying it out.

This sounds delicious but I can’t have a lot of dairy. Do you think it would work with dairy free yogurt instead?
I think this would work with dairy free yogurt, though you might need to thin it out a bit with your favorite dairy-free milk or a smidge of water.
I made this over rice for my husband and I. My goodness, it was so wonderful. Similar to scampi sauce but the added thyme just brought it to another level. And so easy! Except balling my eyes out chopping onions.
Delicious and easy! My son (25) LOVED it. Every bit was consumed!
So happy to hear that, Meg! Thank you for sharing!
This is definitely the best creamy garlic chicken! I often make this for my grandma when she comes to stay with us for a while, and she usually sneaks into the kitchen to get more. All of the ingredients really work together and create an outstanding meal. The chicken turns out so tender. The dish also makes your house smell fantastic. Absolutely irresistible.
My grandma loves when I serve this with mashed potatoes. As for me, I prefer to have this served with beans. Tastes like heaven.
Monica, thank you so much for sharing such a great recipe and all of your useful recommendations. I’m sure they’ll help your readers a lot.

I just saw, and saved, this post on instagram! What a delicious chicken dish – I love the flavours! My family is going to enjoy this very much.
We are definitely on the lookout for new chicken recipes to try! The large quantity of garlic just increases the appeal to me! Wondering, have you ever tried leftovers in a sandwich? Our teen son is looking to add some variety to the chicken sandwiches I make for him, now using a fairly plain baked chicken breast.
I don’t think I’ve made chicken this way yet, so I am really keen to try your recipe. It does look amazing. And the fact that the recipe takes under 30 minutes makes it perfect.
Awesome dish and awesome flavor. I love garlic flavor and just want to try making this amazing dish.
