Friends, if a simple breadstick can be life-changing, this is it. Golden crust, fluffy interior, and buttery seasoned goodness, all in one package. Just as important, they are truly a 1-hour, 1-bowl endeavor, start to finish. How many from-scratch bread recipes can boast that?
You’ll start by mixing up flour, water, yeast, sugar, and a pinch of salt to form a dough, either in the stand mixer or kneading by hand. Let that rest for a few minutes while you pour delectable melted butter straight onto your baking sheet. The breadsticks will soak up just the right amount of butter while they bake. Then press the dough out into a rectangle – you don’t even need to use a rolling pin – cut and twist into strips, bake, and voila! Homemade breadsticks!
No one will believe they didn’t take you all day.
If you’ve shied away from making homemade bread or rolls in the past because it takes too long or you’re uncertain about working with yeast, this is a terrific place to begin. Mel’s blog, where I discovered this recipe, is full of such reliable gems, and also offers this handy tutorial to working with yeast. I made only small adaptations-using less yeast (out of necessity) was no problem, thank goodness and amazingly. You can season the breadsticks with whatever dried herbs suit you, and even with a little grated cheese for extra fun, but my personal favorite combo is just a little Italian seasoning, garlic powder, and sea salt. Yum!
- 1 1/2 cups warm water
- 2 1/4 tsp. (one packet) instant yeast
- 2 tbsp. sugar
- 1 tsp. salt
- 3-4 cups bread flour
- 3 tbsp. butter, melted
- Italian seasoning, garlic powder, and sea salt, for topping
- In the bowl of a stand mixer fitted with a dough hook, combine the water, yeast, sugar, salt, and 1 cup of flour. (If you don’t have a stand mixer, do this by hand in a large bowl.) Mix on medium speed to blend.
- Continue adding the flour until the dough just clears the sides of the bowl. It should be soft and slightly sticky, but not leave much residue on your fingers. Continue kneading for about 3 minutes.
- Let the dough rest in the bowl for 10 minutes.
- Preheat the oven to 400 degrees F. Pour melted butter onto a large, rimmed baking sheet, and use a pastry brush (or your fingers) to spread it out across the entire surface area.
- Turn out the dough onto a lightly floured work surface. Using your hands, pat the dough into a long rectangle, approximately 16” by 7”. Using a pizza cutter, cut the dough into strips about 1” wide.
- Lift each strip, twist it slightly, and place about 1/2” apart on the buttered baking sheet. Sprinkle lightly with Italian seasoning, garlic powder, and sea salt.
- Let breadsticks rise at room temperature for about 20 minutes, then bake for 15-17 minutes, until the tops are golden.
